This dish is so easy to make and the creamy, tangy goat cheese blends perfectly with the sweetness of the balsamic vinegar. It makes a beautiful presentation for a dinner party dessert or for a Sunday brunch.

Ingredients

  • 4 ounces goat cheese log, not crumbles
  • 1/4 cup good, aged balsamic vinegar, plus more for drizzling
  • 1/4 cup honey
  • 1/2 cup goat cheese crumbles, optional
  • 1/8 cup basil, chiffonade, for garnish
  • Flaky finishing salt such as Malden’s sea salt flakes

Instructions

  1. Slice the  goat cheese log, and place into a small sized pan over low heat. Stir until melted.
  2. Slowly whisk in balsamic vinegar until smooth.
  3. Evenly pour the goat cheese and balsamic mixture into bottom of each of 4 serving bowls and top with sliced strawberries.
  4. Drizzle with a bit of  additional balsamic vinegar, a tablespoon of the honey, garnish with basil leaves, and a sprinkle of the goat cheese crumbles, optional.
  5. Finish with flaky sea salt and serve.

Notes

Be sure to use whole goat cheese for the cream because most goat cheese crumbles will not melt.

Chiffonade is a slicing technique used to for herbs, such as basil and vegetables like Swiss chard to cut into long thin ribbons, also great for collard greens.
