This is a fresh, vibrant salad that comes together in minutes. The dressing pairs beautifully with fruit, and the fennel. It would make a beautiful brunch dish, and is easy enough to make for a weekday meal.

Ingredients

  • 1/2 cup white balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper, flake
  • Small fennel bulb, core removed, and thinly sliced
  • Medium-sized, ripe cantaloupe, cut into bitesize pieces
  • 1 cup, blueberries, rinsed
  • Small bunch mint, stems removed, torn into pieces

Instructions

  1. Whisk the olive oil into the vinegar. Add the red pepper flake, along with a pinch of salt, and mix well.
  2. In a medium size bowl, add the fennel and cantaloupe and half the vinaigrette. Mixed to incorporate.
  3. Pour the melon mixture onto a platter, and layer on the blueberries and mint. Season with any additional salt.
