This is one of my all time favorite ways to prepare pork chops. This dish is delicious and so different from most pork recipes. Plus it is so easy to make that I can get dinner on table in 20 minutes. I like to serve this with a green salad and this herbed quinoa recipe.

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoons fennel seeds, roughly chopped
  • 2 garlic cloves, minced or 1 teaspoon garlic powder
  • 2 teaspoons smoked or regular paprika
  • 4 8-10-ounce, 1 inch thick, bone in pork chops

Instructions

  1. Preheat oven to 425°F.
  2. Add the chopped fennel seed, garlic, paprika, and pepper to a small bowl and mix together.
  3. Brush the pork chops with oil and sprinkle with salt and pepper.
  4. Sprinkle on the spices and rub onto all sides of the chops.
  5. Place the chops onto a baking sheet lined with parchment and bake for 15-20 minutes or until the chops reach a temperature of 145°F.
  6. Let the pork chops rest for 5 minutes and serve.
