This cocktail tastes like a little bit of summer in a glass. The watermelon becomes even more flavorful and sweeter with the saltiness from the reposado tequila. The elderflower is the perfect complement and ties it all together to create the yin and yang of cocktails.

Ingredients

Watermelon Purée
(Yields 2 cups)

  • 2 cups watermelon, chopped
  • Splash of lemon juice, or to taste
  • 1 ounce simple syrup
  • Small pinch of salt

Margarita

  • 4 ounces reposado tequila
  • 3 ounces fresh lime juice
  • 3 ounces watermelon purée
  • 1 ounce St. Germain elderflower liquor
  • 1 ounce simple syrup
  • 2 lime slices, for garnish
  • Sugar and lime zest, for optional cocktail rimmer

Instructions

Purée

  1. Add the ingredients to a high-speed blender and pulse a few times until the mixture is puréed. See Notes for suggestions on using any purée leftovers.

Margarita

  1. Rim each cocktail glass with the sugar and lime zest mixture.
  2. Fill glasses and a cocktail shaker with ice.
  3. Add the tequila, lime juice, watermelon purée, elderflower liquor, and simple syrup to the cocktail shaker, and shake vigorously.
  4. Strain into glasses. Garnish with lime slices, if desired, and enjoy.

Notes

Freeze the extra watermelon purée to use later, or mix with seltzer water and a little lime juice to create a refreshing non-alcoholic version.
