My husband’s entire family is from Latvia, and he pines for these pancakes from time to time. I have played with the ingredients a bit to make a fluffier pancake but with basically the same amazing, gooey, cheesy consistency. Eat them savory or sweet—they are delicious either way.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt, or more to taste
  • 1 1/2 cups milk
  • 3 tablespoons butter, melted, plus more for serving
  • 1 egg
  • 1 cup cottage cheese
  • Powdered sugar or syrup, optional
  • Flaky sea salt, optional

Instructions

  1. Sift flour, baking powder, and salt together in a large bowl.
  2. Make a well in the center and add milk, melted butter, egg, and cottage cheese; mix until partially smooth, leaving some lumps.
  3. Heat a lightly-oiled griddle or skillet over medium-high heat. Pour about a 1/4 cup of batter per pancake onto the pan, and cook until bubbles form and the edges are dry, about 3-4 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.
  4. Serve with melted butter and a sprinkle of flaky sea salt. If you prefer sweet, sprinkle on some powdered sugar or syrup.
