Parents of children with limb differences, ask me from time to time, what are some of the basic things they can teach their older children to do in the #kitchen. So, I thought I would share how I clean knives and other sharp utensils. You can also hold the knife handle on the edge of the sink and clean in the similar fashion, but using a large cutting board is much safer. I am making these simple, fragrant and game changing bundles this weekend to add to soups, stews and sauces. Bouquet garni or “garnished bundle” as it translates from French to English are bundles or packages of herbs tied together or rolled into a ball and tucked into cheesecloth or even a tea strainer. Bouquet garni is added to broths and other liquids to add deep flavor and is removed prior to serving the dish. What is the difference between broth and stock?
Broth is made from meat and veggies and stock is made with meat, veggies and the addition of bones. Broths are quite flavorful and add a delicious layer of flavor to, well, everything! I make broth occasionally because it takes less time to cook and is typically thinner than stock.
For extra dark rich broth, do not peel the onions. The peels are what give the stock its rich, amber hue!

Start the potatoes in cold, salted water because cold water helps keep the skins intact and it holds moisture in. Boil the potatoes until they’re tender. Insert a knife into the middle of the potato, if the knife slides easily out there are finished. If not, boil just a minute or two longer and until tender. Remove them from the boiling water as they finish.
The most important thing to remember is to use cold water to start and not boiling water. Boiling water cooks the outside of potato faster and causes uneven texture and finish. Baby spuds, pictured in the video, take about 10 minutes, give or take. I make these often, smash them, and then roast with olive oil, Parmesan and spices. If making, cubed, potatoes, for example to use in potato salad, these will take around 15 minutes where larger chunks or whole new potatoes will be 20-25 minutes.
