These beet balls are loaded with fiber and nutrients. I like to serve these little flavor bombs over rice with a few dashes of teriyaki sauce.
Ingredients
- 2 cups grated beets
- 1/2 white or yellow onion, diced
- 1 large egg
- 1 cup panko breadcrumbs or breadcrumbs of choice
- 1/2 cup toasted sunflower seeds
- 1/4 cup toasted sesame seeds
- 3 tablespoons flour of choice
- 1 tablespoon reduced sodium soy sauce or tamari
Instructions
- Preheat oven to 375°F.
- Form into balls and place on a parchment lined baking sheet and bake for 30 minutes.
- Serve warm with noodles or rice, or make ahead of time, bake, and store in an airtight container in the refrigerator for up to 3-4 days.
