These beet balls are loaded with fiber and nutrients. I like to serve these little flavor bombs over rice with a few dashes of teriyaki sauce.

Ingredients

  • 2 cups grated beets
  • 1/2 white or yellow onion, diced
  • 1 large egg
  • 1 cup panko breadcrumbs or breadcrumbs of choice
  • 1/2 cup toasted sunflower seeds
  • 1/4 cup toasted sesame seeds
  • 3 tablespoons flour of choice
  • 1 tablespoon reduced sodium soy sauce or tamari

Instructions

  1. Preheat oven to 375°F.
  2. Form into balls and place on a parchment lined baking sheet and bake for 30 minutes.
  3. Serve warm with noodles or rice, or make ahead of time, bake, and store in an airtight container in the refrigerator for up to 3-4 days.
