This tomato salad is popping with rich umami flavors. It has a little bit of a kick, and lots of flavor from the chili pepper and fresh tomatoes. The crushed peanuts give it a nice amount of crunchy texture.
Ingredients
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 Thai or serrano chili, minced
- 2 tablespoons sesame oil, or a neutral oil, such as vegetable or canola
- 3 pounds heirloom tomatoes, different colors, if possible, coarsely chopped
- 1/4 of a red onion, sliced thin
- 1/2 cup chopped fresh herbs, such as Thai basil, basil, cilantro and/or mint
- 1/2 cup dry-roasted peanuts, chopped
- 1/4 teaspoon flaky sea salt
Instructions
- In a medium bowl, whisk together lime juice, fish sauce, honey, and chili. While whisking, slowly drizzle in oil until emulsified.
- Add the chopped tomatoes, the onion, and herbs, reserving about a tablespoon of herbs for garnish.
- Mix and pour onto a serving platter. Sprinkle chopped peanuts on top and finish with flaky sea salt.
Notes
Mint might seem like an odd ingredient for this dish, but it adds a wonderful flavor. If you don’t like mint, add extra cilantro, or parsley along with the basil.
