Even the culinary purists in your family will love this skirt steak recipe. It is rich and savory, and the marinade does not compete with the beefy flavor of this cut of meat. Don’t be surprised if your family asks for it often, and be sure to make enough for seconds!
Ingredients
- 2 pounds skirt steak, if 1 piece cut in half
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 3 cloves garlic minced
- 2 teaspoons Italian seasoning
- 1 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Tenderize the meat by placing it on a cutting board, covering it with plastic wrap, and pounding it with a mallet until evenly thin.
- Whisk together all the remaining ingredients in a bowl until combined.
- Place the meat in the marinade and refrigerate for at least an hour, but letting it marinade overnight is even better.
- Pull the meat out of the refrigerator at least 30 minutes before cooking to bring to room temperature.
- Heat an iron skillet large enough to hold the steak without crowding it until sizzling hot. Sear for 3 minutes per side for medium rare, 4 minutes on each side for medium.
- Rest the cooked steak on a cutting board for 10 minutes before slicing.
- Slice the steak against the grain, top with flaky sea salt, and serve with lime wedges.
