I’ve been enjoying the culinary trend of cooking with as many parts of the vegetables from my garden for years, and I’m thrilled others are jumping on board!

Ingredients

  • 4 cups radish tops, packed, rinsed well, and dried
  • 2-3 cloves garlic finely chopped
  • 1/2 large lemon juiced, about 2 tablespoons
  • 1/2 cup pine nuts, walnuts, or pistachios, coarsely chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Combine everything except salt and pepper in a high-speed blender or food processor.
  2. Process until smooth, scraping down the sides as needed. Add additional olive oil or a small amount of filtered water until you reach the desired consistency
  3. Taste for seasoning and add salt and freshly ground black pepper as necessary.
