The sweet and spicy peppers pop with the earthy beans and tangy chorizo. This is a perfect appetizer to serve for Sunday football!

Ingredients

  • 1 loaf French bread
  • 2 cups salsa
  • 8 ounces Oaxaca shredded cheese
  • 8 ounces Mexican-style chorizo
  • 14-ounce can refried beans
  • 1/2 cup sweet and spicy pickled peppers
  • Fresh cilantro, for garnish, optional

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the French loaf in half, lengthwise. Remove excess bread from the center, leaving the sides and bottom of the bread place the bread on a baking sheet.
  3. Spread the salsa over both sides of the loaf.
  4. Top with cheese, chunks of chorizo, dollops of refried beans, and the pickled peppers.
  5. Bake in the oven until the cheese is melted and bubbly, about 10 minutes. Then broil for 1-2 minutes to brown the top.
  6. Garnish with cilantro, optional.
