This was one of the first healthy salads I wrote when working on my cookbook. It has simple ingredients, lots of flavor, and packs well, making it a perfect meal for a workday lunch. Serve it over a bed of fresh spinach for an extra dose of nutrition.

Ingredients

  • 14-ounce can chickpeas, drained and slightly mashed
  • 2 stalks celery, chopped
  • 2 green onions, chopped
  • Small bunch dill, minced
  • Heaping tablespoon capers, roughly chopped
  • 1/4 cup, favorite mayo
  • Juice from one lemon
  • Handful of fresh spinach
  • Kosher salt and freshly ground pepper

Instructions

  1. Mix all the ingredients together. Salt and pepper to taste, and refrigerate until ready to serve.
