This recipe creates an incredibly smooth, creamy hummus. This is my best hummus recipe yet!

Ingredients

  • Juice from one lemon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon ground black pepper
  • Large clove garlic, peeled and coarsely chopped
  • 1/2 cup tahini
  • 15-ounce can chickpeas
  • Roasted red pepper and feta cheese, for garnish, optional
  • Warm pita bread or tortilla chips for serving

Instructions

  1. Place all ingredients except chickpeas together in a high-speed blender, and blend on high for 15-20 seconds.
  2. Set aside some chickpeas from the can to use as a garnish (optional). Add the chickpeas and aquafaba (the liquid in the can) to the blender and blend on high for 30 seconds.
  3. Scrape the edges of the blender and mix again on low for 20-30 seconds to incorporate. The mixture should be incredibly creamy.
  4. Pour into an airtight container and refrigerate until ready to serve.

Notes

I like to spread the hummus evenly on the bottom of a shallow bowl, then top it with some roasted red peppers, a few additional chickpeas, and feta cheese for garnish.

Double the recipe if making for a crowd.
