Ingredients

  • One small, wild caught salmon filet with skin
  • 1/3 cup soy sauce
  • 1/4 cup maple syrup
  • 2 tablespoons fish sauce
  • 1 plump, garlic clove, minced
  • 1 piece ginger, peeled and minced, optional
  • 1/2 teaspoon ground black pepper
  • A few cilantro or parsley sprigs for garnish, optional

Instructions

  1. Mix everything together except the salmon and herbs, and pour a thin layer onto a rimmed baking sheet. Place the salmon flesh side down and then pour the remainder of the sauce over the top of the salmon. Marinate for 1 hour, but 2-3 hours is even better.
  2. Prior to grilling, remove the salmon from the refrigerator and let it sit for 20-30 minutes to come to room temperature.
  3. Preheat the grill for 10 minutes on high. Reduce the grill heat to medium and place the fish, flesh side down, on to the hot grill and grill for 5 minutes. Then flip the fish and grill for another 4 minutes for medium.
  4. Let the salmon rest for 4-5 minutes, garnish with herbs if using, and enjoy.
