This recipe creates an incredibly smooth, creamy hummus. This is my best hummus recipe yet!
Ingredients
- Juice from one lemon
- 1/2 teaspoon cumin
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
- Large clove garlic, peeled and coarsely chopped
- 1/2 cup tahini
- 15-ounce can chickpeas
- Roasted red pepper and feta cheese, for garnish, optional
- Warm pita bread or tortilla chips for serving
Instructions
- Place all ingredients except chickpeas together in a high-speed blender, and blend on high for 15-20 seconds.
- Set aside some chickpeas from the can to use as a garnish (optional). Add the chickpeas and aquafaba (the liquid in the can) to the blender and blend on high for 30 seconds.
- Scrape the edges of the blender and mix again on low for 20-30 seconds to incorporate. The mixture should be incredibly creamy.
- Pour into an airtight container and refrigerate until ready to serve.
Notes
I like to spread the hummus evenly on the bottom of a shallow bowl, then top it with some roasted red peppers, a few additional chickpeas, and feta cheese for garnish.
Double the recipe if making for a crowd.
